Southern Living bakes a pie, or, my out of focus edition

This week Patrick came back from the U.S. with a copy of one of my favorite magazines, Southern Living. So what did I do? Of course, some baking.

Since I’ve been trying to make this happen for four days, let’s get right down to it.

Lemon-Buttermilk Icebox Pie is simple enough and since there are several variations I bought individual pie crusts, cut the recipe in half, and was able to try 2 of the 3 recipes.

So here are your ingredients:

  • 1 14oz can sweetened condensed milk
  • 1 tbsp lemon zest
  • 1/2 cup lemon juice
  • 3 large egg yolks
  • 1/4 cup buttermilk
  • graham cracker crust

and here are your VERY simple baking instructions! With instructional out of focus photos provided by yours truly.

1. Preheat the oven to 325 degrees and start whisking together the condensed milk, lemon zest and lemon juice.

2. Beat egg yolks about 4-5 minutes until yolk becomes pale and ribbons form (whichever high speed method you prefer, I chose the KitchenAid since we don’t have a handheld mixer). I actually did this for 7 minutes and the yolks never fully thickened but it came out great anyway!

3. Combine all ingredients into the mixer. Pour into pie crust.

*At this point, I left some pie “batter” in the bowl and then added jam to make “Strawberry Lemon Buttermilk Icebox Pie”!

4. Bake at 325 for 20-25 minutes (even for smaller pies). Cool on a wire rack for 1 hour. Cover and freeze! Serve slightly thawed with whipped cream on top.

Your finished product should like slightly better than this:

We added vanilla and powdered sugar to our cream and I topped it off with ground almonds.

There’s so many things you can do with this recipe to make it better or just better for you… I personally thought just the SMELL of the condensed milk was too strong so I added extra lemon and buttermilk. I even toyed with the idea of adding coconut creme or coconut milk, orange marmalade, crumbled cookies…

If you try this I hope you add your own ingredients to it and let me know how it turns out! I hope you love it.
